Always a favourite appetizer, this easy-to-make bruschetta gets its flavour from the Greek vinaigrette.

2 cups chopped seeded tomatoes
2 green onions, chopped
1 Tbsp. each finely chopped fresh chives, oregano and parsley
1/2 cup Renée's Mediterranean Greek Vinaigrette
1 baguette (400 g), split

How do I make it ?
Combine all ingredients except baguette.
Place baguette halves, cut sides up, on baking sheet. Broil, 6 inches from heat, 1 to 2 min. or until lightly toasted.
Spread bread with tomato mixture. Broil 3 to 5 min. or until heated through.
Cut each baguette half into 9 slices. Serve warm.

Prepare with your favourite fresh herb or blend of fresh herbs, such as basil and/or cilantro, for the suggested fresh herbs.
For a change of pace, broil baguette halves as directed. Cut each half into 9 slices, then top with the tomato mixture and serve. No need to broil the second time.
