1/4 cup dry bread crumbs
3 Tbsp. Kraft 100% Parmesan Grated Cheese
4 slices (3/4 in/2 cm) unpeeled eggplant
2 cups tomato sauce
2 Cracker Barrel Mozzarella Cheese Slices, halved
4 Italian style buns, split

Step 1
BEAT egg slightly in small bowl. In another small bowl mix bread crumbs and parmesan cheese.
Step 2
DIP eggplant slices into beaten egg, then into crumb mixture, coating well.
Step 3
PLACE in an oven-proof casserole dish. Top with tomato sauce and mozzarella.
Step 4
BAKE at 400°F (200°C) for 15 to 20 minutes or until eggplant is tender, and cheese has melted.
Step 5
PLACE a cheese-topped slice of eggplant on each bun. Spoon some sauce over each bun and sprinkle with additional parmesan cheese, if desired.
