These make-ahead dessert parfaits are cool and creamy. Our version of this traditional frozen Italian dessert is flavoured with chocolate, orange and crushed cookies.

2 cups whipping cream
2 egg whites
2/3 cup granulated sugar
1/4 cup amaretto or hazelnut-flavored liqueur or rum
25 Mr. Christie's Chocolate Wafers
2 oz. Baker's Semi-Sweet Chocolate, grated
2 Tbsp. candied or freshly grated orange zest

Step 1
WHIP cream, reserve. Beat egg whites until frothy, then gradually add sugar and beat until stiff peaks form. Add liqueur and 1/2 cup crushed chocolate wafers. Fold into whipped cream.
Step 2
PLACE about 1 Tbsp (15mL) crushed chocolate wafer crumbs in bottom of 1 parfait glass, follow with successive whipped mixture, grated chocolate, orange peel and more of the whipped mixture. Top with more crumbs, chocolate and peel. Repeat with remaining 5 parfait glasses.
Step 3
FREEZE until firm, about 3 hours, or overnight. Remove from freezer and let stand 15 minutes before serving.
