Cream cheese adds a luxurious creaminess to this hearty Italian sausage and kale soup. You may want to have some crusty bread on hand for soaking up all the lovely, creamy broth.

1 lb. (450 g) Italian sausage
1 small onion, chopped
1 Tbsp. minced garlic
2 Tbsp. flour
1 cup milk
125 g (1/2 of 250-g pkg.) Philadelphia Brick Cream Cheese, cubed
3/4 lb. (340 g) red potatoes (about 2), peeled, cut into 1/2-inch cubes
4 cups 25%-less-sodium chicken broth
6 cups torn stemmed kale leaves

How do I make it ?
Remove casings from sausage if necessary; crumble sausage into large saucepan. Cook on medium heat 7 min. or until done, stirring frequently. Remove sausage from pan with slotted spoon; drain on paper towels. Discard all but 2 Tbsp. drippings from pan.
Add onions and garlic to reserved drippings; cook 3 min., stirring frequently. Stir in flour. Add milk and cream cheese; cook and stir 3 min. or until cream cheese is completely melted and sauce is well blended.
Add potatoes, chicken broth and sausage; stir. Bring to boil, stirring frequently. Simmer on medium-low heat 15 min., stirring occasionally. Remove from heat. Add kale; cover.
Let stand 5 min. or until kale is softened.

Substitute baby spinach for the kale.
Pair with crusty whole wheat rolls.
If necessary, add enough oil to the reserved sausage drippings to get the 2-Tbsp. measure needed to cook the onions and garlic.
