1/2 lb. (225 g) small red potatoes (about 3), cut into 1-inch pieces
1/2 lb. (225 g) small beets (about 3), peeled and cut into 1-inch pieces
1/2 lb. (225 g) baby carrots
1 large onion, cut into 1-inch pieces
1/4 cup Kraft Calorie-Wise Zesty Italian Dressing
1/2 cup Cracker Barrel Shredded Light Tex Mex Cheese
2 Tbsp. chopped fresh cilantro
1 lime, cut into 4 wedges

How do I make it ?
Heat barbecue to medium-high heat.
Toss vegetables with dressing.
Spoon onto centres of 4 large sheets heavy-duty foil; fold to make 4 packets.
Grill 20 min. Remove packets from grill; open carefully. Top vegetable mixture with cheese. Reseal packets; let stand 1 min. or until cheese is melted.
Open packets. Sprinkle with cilantro. Squeeze lime wedge over ingredients in each packet.

These packets can be grilled longer if you like more caramelized vegetables.
Since you can just throw the foil packets out once the vegetables have been eaten, this is the perfect vegetable side to take to your next picnic.
