2 medium peeled carrots, chopped

1 medium onion, halved lengthwise and sliced

1 clove garlic, minced

1 cup sliced mushrooms

1/2 cup chopped celery

1 can (19oz/540mL) diced tomatoes

1 1/2 cups chicken broth

1/2 tsp. dried basil

1/4 tsp. dried thyme

How do I make it ?

Step 1
MELT butter in large saucepan over medium heat.
Step 2
SAUTÉ carrots, onion, garlic, mushrooms and celery for 5 minutes.
Step 3
STIR in remaining ingredients, except cheese; bring to a boil.
Step 4
COVER and simmer about 15 minutes or until vegetables are tender.
Step 5
SPOON into soup bowls and sprinkle each serving with cheese.
