1 medium onion, chopped
1-1/2 cups instant white rice, uncooked
1 can (14 fl oz/398 mL) peach slices in light syrup, undrained
1/3 cup mango chutney
2 tsp. curry powder

How do I make it ?
Cook chicken in hot oil in large frying pan on medium heat until chicken is cooked through, turning chicken over and adding onion to the pan after 8 minutes.
Add rice, peaches with their juices, chutney and curry powder; mix well.
Bring to boil; cover. Remove from heat. Let stand 5 min.

For a stronger curry flavour use medium or hot curry powder. Add 1/2 tsp. ground cumin, ginger or coriander for a more authentic flavour.
