Sour cherries, sugar and pectin are briefly cooked to make ruby-red jars of homemade jam. You'll never buy store-bought jam again!

What do I need ?

4 cups pitted finely chopped sour cherries
2 1/2 cups sugar
1 box Certo Light Pectin Crystals

How do I make it ?

Step 1
MEASURE prepared cherries into a large bowl.
Step 2
MEASURE sugar and set aside.
Step 3
COMBINE fruit pectin crystals with 1/4 cup (50 mL) of the measured sugar.
Step 4
STIR pectin mixture into fruit. Let stand 30 minutes, stirring occasionally.
Step 5
STIR in remaining sugar and continue stirring for 3 minutes until most of the sugar has dissolved.
Step 6
POUR quickly into jars or plastic freezer containers. Cover with tight lids and let stand at room temperature until set (may take up to 24 hours).
Step 7
STORE in freezer. If used within 2 or 3 weeks, jam may be stored in refrigerator.
