2 lb. (900 g) boneless beef short ribs
1 onion, coarsely chopped
3/4 cup 25%-less-sodium chicken broth
1 canned chipotle pepper in adobo sauce, chopped
2 cloves garlic, minced

How do I make it ?

Step 1
Place ribs in electric pressure cooker sprayed with cooking spray; top with onions.
Step 2
Mix remaining ingredients until blended; pour over ribs. Close and lock lid. Turn Pressure Release Valve to Sealing position.
Step 3
Cook 40 min. using MANUAL/HIGH PRESSURE COOK setting. When timer goes off, use Quick Pressure Release to release steam. Remove lid. Use tongs to remove ribs from pressure cooker; cover to keep warm.
Step 4
Skim and discard fat from surface of sauce in pressure cooker; cook sauce 10 min. using SAUTÉ setting on high heat, stirring frequently.
Step 5
Spoon sauce over ribs before serving.

Note
Have leftovers? Cool, then refrigerate any leftover meat in the leftover sauce. When ready to reheat, remove and discard any fat from surface of sauce. Cook ribs and sauce in saucepan on medium-low heat until heated through, stirring frequently.
