This sweet and savoury jelly (with a hint of heat!) really packs a punch. Served with cheese platters, grilled chicken or roasted pork, our Spiced Apple and Red Pepper Jelly is a tasty homemade condiment.
What do I need ?
4 cups chopped sweet red peppers
2 tsp. dried crushed chili pepper flakes
1 cup apple juice
1/2 cup Heinz Apple Cider Vinegar
6 cups granulated sugar
6 cinnamon sticks
6 thin slices fresh lemon
2 pouches Certo Liquid Pectin

How do I make it ?
PURÉE sweet red peppers in a food processor or blender. Line a strainer or colander with cheesecloth. Strain enough juice to make 1 1/4 cups.
COMBINE pepper juice, pepper flakes, apple juice, vinegar, sugar, cinnamon and lemon in saucepan. Bring to a full boil.
IMMEDIATELY stir in liquid fruit pectin.
BRING to a full rolling boil and boil hard 1 minute, stirring constantly. Remove from heat and skim off foam.
USING sterilized tongs, carefully place one of the cinnamon sticks and a strip of lemon in each warm sterilized jars.
POUR hot jelly quickly into warm jars filling up to 1/4 inch from rim.
SEAL while hot with sterilized 2-piece lids with new centres.
