1 whole chicken (3-1/2 lb./1.6 kg)
2 navel oranges, divided
1/2 cup cranberries

Step 1
Heat oven to 400ºF.
Step 2
Trim off excess skin and fat from chicken. Use sharp knife or poultry shears to cut chicken through backbone. Remove and discard bone. (Do not remove chicken skin.) Turn chicken, skin side up, on work surface; flatten with palm of hand.
Step 3
Prepare stuffing in large saucepan as directed on package, except reduce the water to 1/2 cup. Remove from heat.
Step 4
Grate enough zest from 1 orange to measure 1 Tbsp., then squeeze zested orange to get 1/2 cup juice. Remove and discard peel from remaining orange; chop orange. Add orange zest, juice and chopped oranges to stuffing along with the cranberries; mix lightly.
Step 5
Spread stuffing mixture evenly under the chicken skin. Thread 2 large metal skewers diagonally through chicken to keep it flat while roasting.
Step 6
Place chicken in shallow pan; cover loosely with foil.
Step 7
Roast 1-1/2 hours or until chicken is done (170°F).
