What do I need ?

2 cups pitted and chopped ripe sweet cherries
3 cups pitted and finely chopped ripe apricots
1/4 cup lemon juice
3-3/4 cups sugar
1 box Certo Light Pectin Crystals

How do I make it ?

Step 1
MEASURE prepared fruit and lemon juice into a large saucepan.
Step 2
MEASURE sugar and set aside.
Step 3
COMBINE fruit pectin crystals with 1/4 cup of measured sugar.
Step 4
STIR pectin mixture into fruit.
Step 5
PLACE saucepan over high heat and stir until mixture comes to a full boil.
Step 6
STIR in remaining sugar. Continue to cook and stir over high heat until mixture returns to a full rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat.
Step 7
STIR and skim foam for 5 minutes to prevent floating fruit.
Step 8
POUR quickly into warm, sterilized jars filling up to 1/4-inch from rim.
Step 9
SEAL while hot with sterilized 2-piece lids with new centres.
