Step 1

Slice an English muffin in half and toast. Spread a spoonful of prepared salsa overtop of each muffin half and place on a dinner plate. Top muffin ihalves with a small handful of baby spinach leaves.

Step 2

Prepare simulated ground beef according to package directions. Slice in half and place overtop of spinach leaves, allowing the heat from the patty to wilt spinach leaves slightly.

Step 3

Poach two eggs and place overtop of patty. Sprinkle with a bit of shredded cheddar cheese and serve.
